Mexican Street Corn Recipe

This tasty elote recipe is a little more eater-friendly. You can have this dish as a side or even as a dip with some fresh tortilla chips.

Ingredients

  • 1 tbsp unsalted butter

  • 4 ears of corn, shucked & kernels removed

  • 2 tbsp mayo

  • 3 oz cotija cheese, freshly grated or crumbled

  • ½ teaspoon smoked paprika

  • 1 green onion stalk, finely chopped

  • Handful of freshly chopped parsley

  • Vatsana’s Seasoning to taste

Let's begin the adventure:

  1. In a cast iron skillet, melt butter over medium-high heat, add corn kernels in an even layer and cook for 10-15 minutes, or until charred.

  2. After charred, place into a large mixing bowl and add in mayo, cotija, paprika, green onion, parsley, salt, pepper, and Vatsana’s Seasoning to taste.

  3. Mix to combine and enjoy Vatsana’s style!
