Mexican Street Corn Recipe
This tasty elote recipe is a little more eater-friendly. You can have this dish as a side or even as a dip with some fresh tortilla chips.

Spicy: ●●◦◦◦ When you add Vatsana's Seasoning
1 tbsp unsalted butter
4 ears of corn, shucked & kernels removed
2 tbsp mayo
3 oz cotija cheese, freshly grated or crumbled
½ teaspoon smoked paprika
1 green onion stalk, finely chopped
Handful of freshly chopped parsley
Vatsana’s Seasoning to taste
Let's begin the adventure:
In a cast iron skillet, melt butter over medium-high heat, add corn kernels in an even layer and cook for 10-15 minutes, or until charred.
After charred, place into a large mixing bowl and add in mayo, cotija, paprika, green onion, parsley, salt, pepper, and Vatsana’s Seasoning to taste.
Mix to combine and enjoy Vatsana’s style!
