Chili Salmon with Pineapple Mango Salsa

The spices on this fun & easy salmon dish create a delicious crunch and add a hint of heat to balance out the sweetness.

Ingredients

Pineapple Mango Salsa

  • 1 pineapple, diced

  • 1 mango, diced

  • ½ red onion, diced

  • 1 jalapeno, diced

  • Handful fresh chopped cilantro

  • 1 lime

  • salt

Baked Chili Salmon

  • 4 salmon fillets

  • ½ lemon

  • 1 ½ teaspoon Vatsana’s seasoning

  • ½ teaspoon brown sugar

  • ¼ teaspoon black pepper

  • Butter

  • Salt

Let's begin the adventure:

For the Salsa

  1. Add pineapple, mango, red onion, jalapeno, and fresh cilantro into a large mixing bowl.

  2. Drizzle with lime juice and add salt.

  3. Mix well, cover and refrigerate until ready to use

For the Salmon

  1. Preheat the oven to 400F.

  2. Add foil to the casserole dish and add salmon fillets.

  3. Drizzle lemon juice on both sides of the fillet

  4. Mix Vatsana’s Seasoning, brown sugar, and black pepper.

  5. Sprinkle salt and chili mixture on both sides of the fillets

  6. Add butter on top of each fillet

  7. Bake for 10 - 12 minutes until the salmon becomes tender and flaky.

  8. Remove from oven and allow fillets to cool for 5 minutes

  9. Once cool, top each fillet with desired amount of pineapple mango salsa

  10. Serve and enjoy Vatsana’s style!
