Chicken Enchiladas Recipe

This popular, delicious recipe is ideal for large gatherings and meal prepping. You can bring people together to cook this recipe like an assembly line, and any leftovers will freeze easy. There's nothing spicy in this recipe, so kick it up with Desvelados Hot Sauce and it's delicate lime, avocado creaminess, and serrano pepper-fueled flavor.

Ingredients

  • 2 tablespoons vegetable oil

  • 1 small white onion, diced

  • 1 1/2 pounds chicken breasts, diced into 1/2-inch pieces

  • 1 (4-ounce) can diced green chiles

  • salt

  • black pepper

  • 1 (15-ounce) can black beans, rinsed and drained

  • 8 large flour tortillas

  • 3 cups shredded cheese

  • 1 jar of red enchilada sauce

  • 1 bottle of Desvelados Hot Sauce

Let's begin the adventure:

  1. Preheat oven to 350°F.

  2. In a large pan, heat vegetable oil over medium-high heat. Add onion and sauté for 3 minutes, stirring occasionally.

  3. Add diced chicken and green chiles, and season with salt and pepper. Sauté the mixture for 6-8 minutes, until the chicken is cooked through.

  4. Add in the beans and stir until evenly combined. Remove pan from heat and set aside.

  5. Lay out a tortilla and spread the enchilada sauce over it. Add the chicken mixture in a line down the center of the tortilla, then sprinkle it with cheese. Roll up tortilla and place in a greased baking dish in a way so it doesn't unroll itself. Repeat.

  6. Spread enchilada sauce evenly over the top of the enchiladas, followed by cheese.

  7. Bake uncovered for 20 minutes.

  8. Serve the enchiladas with your choice of toppings (e.g. cilantro, avocado, etc.)

  9. Squeeze Desvelados Hot Sauce over each bite of enchilada.
